Efficient Cooling From Oven to Shelf
Bread can be cooled either manually on racks (ambient cooling) or automatically using trays, racks, or spiral conveyors in industrial setups. Bartech offers solutions for both.
Cooling time depends on loaf size, shape, and baking profile.
Larger, denser loaves require longer cooling times, which can be adjusted by conveyor speed in spiral systems.
Key cooling variables include:
-
Conveyor cycle time
-
Temperature and humidity control
-
Airflow (convection-based cooling)
The goal is to reduce bread temperature from 93–97°C to 32–43°C, ensuring optimal texture, moisture compliance, and shelf life. After cooling, the bread is sliced and packaged.
